What the app changes, and what it leaves exactly as it was.
Tick Remove text and every character drawn on the page is taken out of the PDF. The panel describes that box as stripping all written content from the document, and that is exactly what it does.
The pages come back with the same size, the same order, and the same pictures. Only the writing is gone, so what is left is the layout of the document without a word in it.
This is a filter, not an editor. A PDF stores text as drawn objects rather than as an editable paragraph, so nothing reflows when the text goes. That is also the answer to the question people ask a reader first: there is nothing to click into, which is why a filter is the way to remove it.

Remove images strips embedded pictures, graphics, and illustrations. Remove vectors strips drawn shapes, lines, and other vector artwork. They are separate boxes, so you can clear one kind and keep the other.
Photos, scans, and logos live in the image layer. Borders, table rules, arrows, charts, and background tints are usually vector artwork. A page that still looks busy after the pictures go is normally holding vectors.
Each box is class-wide. Remove images takes out every image in the file rather than one you point at, and Remove vectors does the same for every drawn shape. That is the trade for not having to open an editor.
The objects are removed from the content of the PDF. Nothing is drawn on top of them and nothing stays behind them, so there is no hidden layer left in the file.
A white-out or a black box works the other way round. It adds a shape over the content while the original object stays in the file underneath, which is why covered text can come back when the page is copied into a text editor.
It is also a different job from clearing metadata. Metadata is the information about the file, such as the author, the software, and the dates. The page content and the file information are stored apart, so each has its own app.
Three checkboxes cover the drawn content of the page. Everything else inside a PDF is a different job, so here is where each one goes.

Leave all three boxes empty and the job still runs. It simply hands back the PDF you sent, which is why the panel says: Choose at least one thing to remove, or the file comes back unchanged.
A watermark, a stamp, a logo, and a scanned signature are all image or vector objects, so the matching box strips them. Read each one with the same caveat: the box clears every object of that kind in the file, not the one you point at.

A signature added to a scanned page sits in the image layer. Remove images takes it out and the text stays put, so the document still reads the way it did.
Turn on Remove images and Remove vectors, and leave Remove text off. What comes back is the writing on plain pages, which is lighter to send and simpler to reuse.
PDFs carry contracts, invoices, and private papers. This is exactly how yours is handled.
Every upload and every download runs over an encrypted connection, so the PDF cannot be read on the way there or back. The servers that do the work are in Europe.
The whole process is automated. Nobody reads, opens, or copies your PDF, and the contents of the file are not monitored.
You keep the copyright and the ownership of the PDF you upload and of the one you get back. Your files are never used to train AI models.
