Metadata is not one list. A photograph carries EXIF written by the camera and XMP written by whatever edited it; a song carries ID3; a PDF carries document information. This editor keeps those apart and puts the name of each standard above the fields that belong to it, so you can see which part of the file you are changing rather than scrolling one long undifferentiated table. It is the clearest difference between this editor and the ones that show every tag in a single flat list.
Every field has its own delete control, so you can strip the camera serial number or a stale author name while leaving the capture date and the copyright line exactly where they are. Nothing is committed until you save, a counter tells you how many fields are queued for removal, and anything you deleted by mistake can be restored with the same button. Files travel over an encrypted connection to servers located exclusively in Europe, and the download link you get back is generated randomly so it cannot be guessed. Nobody reads or looks at what you upload: processing is fully automated, there is no human interaction with the files, no copies are made and no backups are kept. Your uploads are never used to train AI models, and you keep the copyright and ownership of both the file you send and the file you get back.

You can edit the fields the file itself allows to be written. Some values are read-only because they describe the file structure rather than its content, and those are shown to you but not offered for editing. If a file carries no editable fields at all, the editor says so rather than presenting an empty form.
Yes. EXIF fields appear in their own section, separate from XMP, so it is clear which standard you are editing. Which specific EXIF fields you can change depends on what the photo actually carries and on which of them are writable.
Yes, and that is the point of the delete control next to each field. Removals are queued rather than applied immediately, a counter shows how many are pending, and every one can be restored before you save. To clear all metadata from a file in a single step, use the metadata remover instead.
